Salerno

A refined setting, a kitchen and a cellar to discover …

Come and live it in the old town of Salerno. Two dining rooms and a garden in a private courtyard … dinner every day, lunch from Friday to Sunday.

The indoor room with its exposed stone wall, marble tables and petrol-blue velvet armchairs

The origins

Hydra opened in 2013 as a restaurant and pizzeria: its founder, Marco D'Amato, took over what had been an old trattoria and pizzeria called Flamenco and, with the architects Francesco Montella and Lycourgos Lambrinopuloulos, began a radical transformation. The place grew and changed several times until 2020: with the arrival of a new partner, Nicola Sessa, in 2019, Hydra became what it is today.

From Flamenco to Hydra

The evolution …

  • The entrance

The Flamenco sign, the pizzeria that occupied these rooms before Hydra: red lacquered wood shopfront and doors at the end of the alley

  • The dining room

The Flamenco dining room before the works: fake stone on the walls, a mural with a bull, and the arch already in place
The same room today: the stone arch opens onto the counter, with velvet armchairs and lamps on the tables
  • The courtyard

The courtyard before the works: yellow walls, a terracotta floor and a gazebo closed in with tarpaulins
The same courtyard today, with the pergola, the trees and the lamps lit on the tables

The kitchen

There is one goal: to work with seasonal produce and offer a sustainable cuisine. Chef Adriano Dentoni Litta is joined by Francesca Pagliei, Fernando Warnakulasurya and Mozid Abdul.

The cellar

Marco and Nicola, already mentioned, together with Michele Di Popolo, are always looking for wineries and labels to enrich the wine list, favouring small producers and «artisans». In the dining room, thanks to the kindness and professionalism of Lorenzo Zagaria and Saveriana Bubani… they are the ones who will make you feel at home.

The garden

A secluded, intimate, private place… From April to October, the garden becomes the most sought-after corner of Hydra: a few tables immersed in greenery, soft lighting and a unique atmosphere…
