The origins
Hydra opened in 2013 as a restaurant and pizzeria: its founder, Marco D'Amato, took over what had been an old trattoria and pizzeria called Flamenco and, with the architects Francesco Montella and Lycourgos Lambrinopuloulos, began a radical transformation. The place grew and changed several times until 2020: with the arrival of a new partner, Nicola Sessa, in 2019, Hydra became what it is today.

There is one goal: to work with seasonal produce and offer a sustainable cuisine. Chef Adriano Dentoni Litta is joined by Francesca Pagliei, Fernando Warnakulasurya and Mozid Abdul.

The cellar
Marco and Nicola, already mentioned, together with Michele Di Popolo, are always looking for wineries and labels to enrich the wine list, favouring small producers and «artisans». In the dining room, thanks to the kindness and professionalism of Lorenzo Zagaria and Saveriana Bubani… they are the ones who will make you feel at home.

The garden
A secluded, intimate, private place… From April to October, the garden becomes the most sought-after corner of Hydra: a few tables immersed in greenery, soft lighting and a unique atmosphere…
